Polysorbates are a family of surface-active ingredients based on mono-esters of Sorbitan, a derivative of Sorbitol (derived from corn). The Sorbitan group is then bonded with a fatty acid, typically derived from Palm Oil. Stopping there creates a range of low HLB ingredients that act primarily as emulsifiers, these used to be known under the 'SPAN' tradename. Ethoxylating the mixture raises the HLB (increases the ingredients water-loving capacity) making this group more suitable as solubilisers. This family, the Polysorbates have traditionally been known by the 'TWEEN' tradename and differ in their HLB due to the size and shape of their water-repelling tails. The heavier the fatty acid tail, the lower the HLB and the less suitable the polysorbate becomes for use as a solubiliser in a water-dominant system.
